Lemon Poppy Seed Fruit Salad

This is a great dessert to prepare ahead of time because it gets better and more flavorful the longer it sits. You can use any fruit, whatever is in season. The riper and sweeter it is, the less maple syrup you will need to use.

Ingredients

  • 2 cups fruit, I used mangoes + blackberries
  • 1 teaspoon poppy seeds
  • 1 - 3 teaspoons maple syrup
  • juice + zest from 1 lemon

Instructions

  1. In a small mixing bowl whisk together the poppy seeds, maple syrup, lemon juice and zest.
  2. Combine well and pour on top of the fruit.
  3. Toss to combine well, and serve salad with a dollop of earl grey coconut cream {see below}.
