Savory Apple Salad with Celery + Peanuts

Recipe lightly adapted from Six Seasons A New Way With Vegetables. Any apple variety will work, but a crispy, lightly sweet yet not too tart variety like Golden Delicious is ideal. If you are allergic to peanuts, another seed or nut will work in its place.
Makes: 4 small salads
  • 2 medium Golden Delicious apples, thinly sliced {see notes}
  • 5 celery stalks with leaves, thinly sliced
  • 4 green onions, thinly sliced
  • 2 tablespoons lemon juice
  • ¼ cup olive oil
  • sea salt, to taste
  • black pepper, to taste
  • ¼ cup unsalted peanuts, roughly chopped
  1. In a large mixing bowl combine the apples, celery, green onions, lemon juice and olive oil. Mix until well-combined and then taste.
  2. Season with a hefty pinch of salt and pinch, and then mix again.
  3. Plate are garnish with peanuts.
