Loaded Sweet Potato Fries with Crispy Beans

These loaded sweet potato fries are the perfect snack to share with a few friends or a hearty meal to share with someone you love. If you don't have any chives on hand you could use scallions or red onions. If you don't have any cannellini beans use whatever beans you have on hand {pinto, black, kidney, etc.}.


  • {1} batch crispy sweet potato fries
  • 1 cup cooked cannellini beans
  • 2 tablespoons olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup red cabbage, shredded
  • 2 tablespoon chives, chopped
  • 1/4 cup Garlic Tahini Cream {see below}


  1. Prepare the crispy cannellini beans while the sweet potato fries bake. Heat the olive oil in a skillet over medium heat and toss in the beans. Cook while flipping occasionally for 10 minutes or until golden brown. Avoid stirring too much or the beans will become mushy.
  2. To assemble the fries, layer the beans and tahini cream on top of the sweet potatoes. Top with the cabbage and chives. Serve warm and crispy.
