A few weeks ago I made these loaded sweet potato fries and posted them on Instagram. And you guys kinda went crazy for them – so I wanted to share the recipe with you. They’re vegan and naturally gluten-free and a really great shareable snack for a party.

Or an equally delicious dinner for two.

Even though they seem and taste really indulgent they’re made of all the good things your mind, body and soul crave. Sweet potatoes, beans, cabbage, herbs, tahini, garlic, lemon and that’s about it. The key to these loaded sweet potato fries is to get the sweet potatoes real nice and crispy.

These loaded sweet potato fries are the perfect snack to share with a few friends or a hearty meal to share with someone you love. If you don’t have any chives on hand you could use scallions or red onions. If you don’t have any cannellini beans use whatever beans you have on hand {pinto, black, kidney, etc.}.
Ingredients
  • {1} batch crispy [url href=”https://withfoodandlove.com/baked-sweet-potato-fries-with-garlic-avocado-aioli/” target=”_blank”]sweet potato fries[/url]
  • 1 cup cooked cannellini beans
  • 2 tablespoons olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup red cabbage, shredded
  • 2 tablespoon chives, chopped
  • 1/4 cup Garlic Tahini Cream {see below}
Instructions
  1. Prepare the crispy cannellini beans while the sweet potato fries bake. Heat the olive oil in a skillet over medium heat and toss in the beans. Cook while flipping occasionally for 10 minutes or until golden brown. Avoid stirring too much or the beans will become mushy.
  2. To assemble the fries, layer the beans and tahini cream on top of the sweet potatoes. Top with the cabbage and chives. Serve warm and crispy.
Garlic Tahini Cream

Serves: 1/2 cup
This recipe is adapted from [url href=”http://tasty-yummies.com/2016/01/20/roasted-cabbage-wedges-with-garlic-tahini-and-toasted-pepitas/” target=”_blank”]Tasty Yummies[/url]. If raw garlic is strong too strong for your taste, you can use 1/2 teaspoon garlic granules instead. This recipe will make more than you need, store the remaining cream in an airtight container for up to 5 days. Use over roasted vegetables and grain bowls alike.
Ingredients
  • 3 tablespoons tahini
  • 1 clove garlic, grated
  • 1 tablespoon lemon juice
  • 1/4 cup unsweetened almond milk
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon black pepper
Instructions
  1. Whisk together all of the ingredients in a small mixing bowl until smooth and creamy.
