Raspberry Chamomile Coconut Cream Soda

Serves 8 coconut cream sodas

This recipe can easily be made into a double batch. I've made these both boozy and non-boozy, and both options are great. Feel free to add in an ounce of your favorite spirit {vodka or gin is great} per serving.

Ingredients

  • 2 tablespoons loose chamomile tea
  • 1 cups filtered water
  • 2 - 4 tablespoons maple syrup {or honey}
  • 2 cups of frozen raspberries, plus more for garnish
  • 1 cup full-fat coconut milk
  • club soda
  • ice
  • alcohol {optional, see notes}

Directions

  1. Heat the water to almost boiling and steep the chamomile tea for 5 minutes. Discard the chamomile and cool the brewed tea for about 10 minutes. Add in the maple syrup and stir until dissolved.
  2. In a blender, blend together the chamomile tea and raspberries until smooth.
  3. Fill a glass with ice, add in a ΒΌ cup raspberry chamomile mixture, 2 tablespoons coconut milk and top the rest club soda.
  4. Give it a gentle stir, and serve with a few raspberries on top.
