Tomato Potato + Kale Soup


I’m really good at eating soup. I can just love it up; any kind,  any time. I was craving something rich and creamy, but lately I’ve been rockin’ the dairy free thing. So, I came up with this tomato-potato creation and the end result is a beautiful bowl of heaven. This super easy, two step soup is one you’re gonna want to make over and over again, trust me.

Tomato Potato + Kale Soup

Serves 4 super hearty, delicious bowls of soup.


  • 1 cup chopped carrots
  • 1 small onion, chopped
  • 5 cloves garlic, minced
  • 3 cups of white potatoes, cut into small cubes
  • 3 cups of kale, ribs removed and chopped
  • 1/4 cup tomato paste
  • 8 cups low-sodium organic vegetable stock or water
  • {1} 28 ounce can crushed tomatoes {I used Muir Glen Organics, lining is BPA-free}
  • 2 tablespoons olive oil
  • 1 bay leaf
  • 1 teaspoon of dried basil or handful of fresh basil
  • 1/2 teaspoon of dried oregano
  • sea salt and coarse ground pepper

In a large pot heat the olive oil over a low flame. Sauté the carrots, onions and garlic for about 5-10 minutes, so they start to soften. Then add in the tomato paste and stir till smooth. Next add in the tomatoes, bay leaf, basil, oregano, salt, pepper and vegetable stock. Turn the heat up to medium and simmer until you’ve reached a light boil.

Once the stock is lightly boiling, add in the potatoes. Cook for about 10-15 until they are tender. Now add in the chopped kale. Simmer until all the veggies have reached your desired texture. Serve hot, to a bunch of friends or feel free to eat it in your jammies just like I did.

    The recipe looks solid. I’m not a soup fan but because like you, I add tons of vegetables, it becomes more of a stew than a soup. I may try your recipe with my collard greens that are in this week’s CSA box. I have pinned your recipe.
