We headed to the airport at five in the morning with sleepy eyes, bags packed, an Airbnb booked and a head full of Cape Cod daydreams. But there were other plans in store for us. All of the flights back east were either overbooked or cancelled because of maintenance issues. So we had two choices. Go back home. Or go west. We chose west and hit up San Diego for a few nights. It was great to sink my toes into the ocean – something I miss so much.

And then we headed to the desert. If I can’t have the Cape, my happiest place on Earth, I’ll take the desert. The desert is my spirit animal. I feel free there. Although it wasn’t the trip we dreamed of, it was a good lesson in staying flexible and open to possibilities. And we got in plenty of margaritas + tacos so that’s something, right?

I’ve talked about it a lot in the past, but mentioned in my last post that we fly standby on my husband’s airline whenever we go anywhere. Which lends a tremendous amount of privilege and opportunity, but it also totally sucks. I hear all the time ‘how lucky we are’ and that may be true. I honor my blessings, and I am full of gratitude for everything I have in my life, but it sure as hell ain’t about luck.

I have some serious thoughts/rants about the word lucky. But that isn’t for today.

Today is for watermelon popsicles. Two-ingredient {booze optional} spicy ginger watermelon pops. Because it’s #popsicleweek you guys. Billy is back at it again like a boss, organizing the hell out of like the biggest blogger event of the summer. Last year I brought this creamy goodness to the party.

Spicy Ginger Watermelon Pops

Serves: 10 pops
The booze in this recipe is totally optional, but delicious and helps the iciness of the pops. The ginger can be strong. Start out with a small knob, blend, taste and add in more to your liking.
Ingredients
  • 1/2 medium watermelon, cubed
  • 1 small knob of ginger
  • 1/4 teaspoon sea or pink himalayan salt
  • 1 ounces tequila or rum or vodka {optional}
Instructions
  1. Blend the watermelon and the ginger together until smooth. Run the puree through a sieve and discard the pulp.
  2. Pulse the watermelon juice with the salt and booze for a few seconds.
  3. Distribute the juice equally into the popsicle mold. Cover, add the sticks and freeze until completely frozen.

Hi Kathleen, nope, no need! You are blending it with the watermelon, so it saves you a step.

ohhh this recipe encompasses all my fave things (well, many of them)...a kick, watermelon and ginger. Bummer about the trip. I can relate to some negative feelings on the word "lucky"...it's called hard work, people!

Way to make the best of a bad situation!! I go to the cape every summer as well, and I would be really bummed if I couldn't go. I've never been to San Diego, but I've heard it's lovely! I hope you had a nice time :)
