Apparently this spring, I’ve been wicked obsessed with mangoes. I can’t help it, they’re so ripe and vibrant and juicy and delicious. Truly they are – nature’s candy. I seriously cannot remember a time in my life where I’ve embraced them so much as I have in the past few weeks.
And I cannot remember a time I’ve been this excited about fruit salad. Lemon poppy seed dressing over seasonal fruit and topped with earl grey coconut cream. It’s so simple, so flavorful, so truly mind-blowing. Dare I say, this fruit salad could change your life. Or at least your go-to potluck/picnic/party recipe.
It’s quick, it’s beautiful and the flavors get better and better the longer it sits. Which is a good thing, since you can make it ahead of time for that brunch, barbecue, birthday party or baby shower you’ll be headed to this summer season.
