Yellow Watermelon Salad with Herby Cucumber Relish

Serves 8 wedges

You can use any kind of watermelon variety, it does not need to be yellow. Although this yellow watermelon variety is slightly sweet, with squash undertones and pairs beautifully with the bright, herby cucumber relish. This recipe makes enough relish for about 8 wedges, simply double according to top more melon. The relish can be made ahead of time if need be.


  • 8 watermelon wedges {see notes}
  • 1 small cucumber, diced extra small
  • 2 tablespoons fresh parsley, chopped
  • 1 green onion, thinly sliced
  • 3 tablespoons extra virgin olive oil, more for garnish
  • 2 tablespoons apple cider vinegar
  • sea salt
  • black pepper


  1. Arrange watermelon wedges on a serving platter or individual plates.
  2. In a small bowl combine the cucumber, parsley, green onion, olive oil, apple cider vinegar, a pinch of salt and pepper and mix well.
  3. Spoon the relish on top of the melon and drizzle with a little more olive oil if desired.
  4. Serve at room temperature.
