I just finished re-reading Food Rules by, Michael Pollan and this still is and probably will always be my favorite nutrition book, and it only takes one day to read it. In my opinion this is the mother load of all nutrition books. It’s simple, it’s straightforward and the rules are very simple – Eat food. Not too much. Mostly plants. If you aren’t familiar with Michael Pollan, do a little Google on him…trust me it’s worth your time.
If your food is coming in a package, that probably means it’s highly processed and in general we should all work a little more on eating less of all things packaged. This past week I got a small shipment in from my local winter farm share. Inside it contained these beautifully vibrant organic purple potatoes and the most beautiful farm fresh eggs you’ve ever seen. And voila, Crispy Purple Potatoes with Fresh Oregano + Crumbled Egg was birthed. So here’s to purple potatoes and their heart health special powers, enjoy!
