Balsamic Roasted Beets
This recipe is very easy to double.

- 2 medium beets diced small
- 1/4 cup olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon maple syrup
- sea salt to taste
- black pepper to taste
Preheat the oven to 425 degrees, and line a baking sheet with parchment paper.
In a mixing bowl whisk together the olive oil, balsamic vinegar, maple syrup, salt and pepper. Toss in the beets and combine well. Pour the entire mixture onto the baking sheet and spread out evenly.
Roast for 15 minutes. Remove the tray from the oven, and flip the beets. Return the tray to the oven and roast for another 15 minutes or until tender.
