This slaw can be made ahead of time. Some may prefer it on its second day after all of the flavors have soaked in.

Ingredients
4cupscabbageshredded {see notes}
1peachsliced thin
1/2cupfresh parsleychopped
1/2cupgreen onionsdiced small
1/4cupolive oil
3tablespoonsraw apple cider vinegar
1/4teaspoonpink Himalayan salt
1/4teaspoonblack pepper
1/2cupraw sunflower seeds
avocado slicesoptional garnish
Instructions
Combine the cabbage, peach, parsley, green onions, olive oil, apple cider vinegar, salt and pepper in a large mixing bowl. With you hands toss together thoroughly. Taste and season with my salt and pepper if desired.
Plate and then top with sunflower seeds and avocado slices.
Notes
You can use a combination of green and purple like I have or all one variety over another.
