Ingredients
1scoop vanilla protein powder {see notes}
1cupbaby spinach
1cupzucchiniraw + diced
2teaspoonsmatcha
1cup{very cold} lite coconut milk
2tablespoonscoconut oil {see notes}
pinchpink Himalayan salt
small handful ice
liquid steviato sweeten
Instructions
Place all of the ingredients in a high-powered blender and blend on low. Increase the speed as ingredients start to loosen.
Divide into 2 or 3 glasses and sprinkle with additional matcha to garnish.
Serve and drink cold.
Notes
I use Garden of Life Meal Replacement which is organic, non-GMO, packed with nutrients, vegan, low-carb and keto-friendly. But you can use whichever protein powder works for you. I like to use a refined coconut oil that is odorless and tasteless. Coconut oil is imperative here for texture and body.
