Fresh, vibrant beet grapefruit green juice.
St. Louis is cold.
And sunny.
And unhurried.
The people here are kind and welcoming and patient. We now have a quiet, quirky little home all to ourselves in the city. Walking distance to Forest Park. And you can see the Gateway Arch from our front steps.
For the first time in my adulthood I have a driveway and a backyard now. And come spring I’ll have a garden and a compost to tend to. That is, for sure, my favorite part. Midwest life is calm. Undoubtedly, there will be an adjustment period. But for now all is well.
2014 was long. Tiresome, and sometimes challenging, filled with lots of uncertainty. I welcome 2015 with open arms. I am excited to explore St. Louis. And mostly, I’m looking forward to a fresh new year, limitless possibilities, loads of travel and a brand new start.
The months/weeks leading up to our move were a mess, physically and emotionally. I wrote about the transition a lot, that was a big part of my therapeutic process. Then, my inbox was flooded with beautiful words from all of you. Your well wishes, supportive vibes and positive energy came rushing in. You reading, you listening, you reaching out meant everything to me. Your messages have been received. And, I’ve been carrying that light with me on this journey. Thank you from the bottom of my heart.
In the midst of our moving process, with all that worrying, stressing, packing and celebrating {moving the week between Christmas and New Years is basically insanity} our immunities were compromised. We were living off brothy soups and so many green juices. Green juice is king when it comes to feeling good, and this beet grapefruit green juice is my favorite. The earthiness of the beets, mellows out the tartness of the grapefruit. For me, this combo never tires.
Beet Grapefruit Green Juice
Ingredients
- 2 ruby red grapefruit peeled
- 1 medium red beet trimmed and scrubbed
- 4 handfuls of greens {see notes}
- 4 celery stalks
- 1/8 teaspoon pink Himalayan salt
- knob ginger {optional}
Instructions
- One by one run each ingredient through the juicer.
- Then add in the pink Himalayan salt and stir.

Yum! I love juicing beets except they always stain my hands. But so good for you though!

Sure - combine 1 peeled grapefruit, 1/2 medium beet {raw + chopped}, the greens, ginger, salt and 1 cup water.

I love the idea of beets in green juice! I have been doing more smoothies with fruits and vegetables, so I'm trying to figure out what I can put in the blender. A juicer is on my birthday wish list.
