Gluten-free, sweet and savory snack board for two.
Long before I was married.
Way before I was old enough to date.
I have always loved Valentine’s Day.
Mostly because it is also my younger sister’s birthday. And my she was a premie baby. She came two months early. And her struggle as an infant was turbulent. So growing up, Valentine’s Day was a really big deal in our house. It was a day we celebrated love and triumph. And my sister. And those memories have carried with me into adulthood.
For Valentine’s Day or any special occasion, or even just date night in for that matter, Chris and I love to make snack boards. Snack boards for two you guys! They’re a meal in itself. They’re a combination of a charcuterie board and a dessert board. They’re literally rule-less and limitless. You can put whatever you want on them. And because of this, they’re easy to throw together. They also feel fancy and fun.
A snack board for two pairs perfectly with a glass of wine. Or a dark beer like a stout or porter. They’re meant to be eaten snuggling on the couch in your stretchy pants or on a picnic blanket outdoors with your bare feet in the grass. Basically anywhere but the dining table.
Crunchmaster gluten-free crackers asked me to put together my favorite snack board for two for Valentine’s Day. This one has both sweet and savory elements. The blood oranges aren’t too sweet, but act as a great palate cleanser. The olive oil whipped ricotta can be eaten alone on a cracker with an extra drizzle of olive oil or layered with beet berry sauce. Because that’s the stuff that dreams are made of.
Snack boards for two are also great for best friends. You know? xx

- Whip the ricotta, olive oil, salt and pepper in a bowl using a hand-mixer until it is super smooth and creamy.

Yessss - love the casual vibe of this board while having it still feel special! Any recipe that I can whip up based on what is in my cabinet is a win in my book.

A snack board with whipped ricotta is my favorite at parties. Or for a date night! Love it.
