Herby Cucumber Salad

This salad is best made fresh right before you top the soup.

Servings 1 cup


  • 1 cup cucumber diced small
  • 1/2 cup red onion minced
  • 1/4 cup fresh parsley finely chopped
  • 2 tablespoons olive oil
  • juice from 1 lemon
  • sea salt to taste
  • black pepper to taste


  • Combine all of the ingredients in a bowl.
  • Eat as is, or serve on top of the chilled summer soup.
