Beet Grapefruit Green Juice

Beet Grapefruit Green Juice | @withfoodandlove

St. Louis is cold and sunny and unhurried. The people here are kind and welcoming and patient. We now have a quiet, quirky little home all to ourselves right on the edge of the city, walking distance to Forest Park. You can see the arch from our front steps, pretty cool I guess, eh? I have a driveway and a backyard now {what?!}. And come spring I’ll have a garden and a compost to tend to. That is, for sure, my favorite part. Midwest life is calm. There will be undoubtedly an adjustment period, but for now all is well.

2014 was long, tiresome, sometimes challenging and filled with lots of uncertainty. I welcome 2015 with open arms. I am excited to explore St. Louis. And mostly, I’m looking forward to a fresh new year, limitless possibilities, loads of travel and a brand new start.

The months/weeks leading up to our move were a mess, physically and emotionally. I wrote about the transition a lot, that was a big part of my therapeutic process. Then, my inbox was flooded with beautiful words from all of you. Your well wishes, supportive vibes and positive energy came rushing in. You reading, you listening, you reaching out meant everything to me. Your messages have been received. And, I’ve been carrying that light with me on this journey. Thank you from the bottom of my heart.

In the midst of our moving process, with all that worrying, stressing, packing and celebrating {moving the week after Christmas is basically insanity} our immunities were compromised. We were living off brothy soups and so many green juices. Green juice is king when it comes to feeling good, and this beet grapefruit recipe is killer. The earthiness of the beets, mellow out the tartness of the grapefruit. The combo never tires.

And we drank so much tea — so so much tea!! Mostly herbal, plant-powered tea from Traditional Medicinals.

Traditional Medicinals is leading the wellness tea movement, it;s so major. They use the highest quality pharmacopoeial grade herbs and they’re seriously committed to energy conservation and sustainable operations. Echinacea Plus was and will be my go-to brew this winter. It’s mildly minty, with a twist of citrus. I sent Chris to work each morning with a thermos of Throat Coat. And in the evenings he was soothed and comforted with the Cold Care P.M.

To win a Traditional Medicinals seasonal tea sampler leave me a comment below. I want to know what you’re most looking forward to about 2015!! Contest closes on January 15th at noon central time. One lucky duck winner will be selected at random and notified via email shortly thereafter.

Notes: this makes about 24 ounces of juice, perfect to share with a friend. For an added immunity boost, steep a bag of Traditional Medicinals Echinacea Plus tea, bring it to room temperature and mix it into the juice.

  • 1 red beet, trimmed and scrubbed
  • 4 handfuls of greens {spinach, beet greens, kale}
  • 4 stalks of celery
  • knob of ginger {optional}
  • pinch of himalayan salt {or sea salt}

One by one run each ingredient through the juicer, then add in the salt and stir.

    Eep!! I love St Louis – I went to college there and spent 4 years exploring the area. It’s a wonderful place with an amazing food community. I interned at an architecture firm that specialized in restaurant interiors, so I had a chance to interact with a lot of the restauranteurs there – the food community is something I sorely miss since I’ve moved. In fact, I still tell my friends from STL to keep copies of Sauce and Feast (two awesome local food magazines) to give me when they visit. Anyways, I’m looking forward to my honeymoon to New Zealand!!

    I would love to switch over to nourished, real food and ditch the processed stuff to see how it will make me feel. I have so many sickdays and with MS I can´t really get sick without feeling like a truck ran over me, and then add extratests and extratreatments and godknowswhat…. I am just tired of it.

    I love Traditional Medicinals tea! Their Ginger Aid tea is my favorite. Great for upset tummies. In 2015, I’m most looking forward to changes. Usually change is scary to me, but I want this year to be a year of moving forward and not standing still. All the best to you in STL!!

      It can! I would combine 1 peeled grapefruit, 1/4 cup chopped raw beet, 1 large handful greens, small knob of fresh ginger, pinch of salt, and some liquid. It might be a bit tart, so you could add some orange or orange juice to sweeten it. If you end up making it, I’d love to know how this smoothie version turns out for you :)
