Winter. I love it. The snow, the ice, the sleet + freezing rain, cold temps. I love it all.

Bring it on, the more the merrier! But one of the things I really love most about winter, is pomegranate season. Pomegranates, each seed more spectacular than the next, loaded with such deep, juicy brillance. I really cannot get enough of this superfood.

I love popping pomegranate seeds back for a snack. I know everyone has their favorite way to de-seed a pomegranate. It’s no secret that working with this fruit can turn everything in sight the prettiest shade of pinkish-purply-red. But if you’re new to this fruit and you don’t want to stain everything in your home, check out this video from Food52. They’ll show you how to get the job done without turning your kitchen into a crime scene.

My newest obsession? These creamy coconut pomegranate smoothies. Like, whoa. I had no idea how much I’d love these superfood smoothie treats. They’re awesome for adults but kids will love them too. They’ll also have no idea I hid a serving of fresh greens in there, so drink up!

Creamy Coconut Pomegranate Smoothie {print me!}

Notes: makes {1} 16 ounce serving smoothie.

Ingredients:

  • 1 cup pomegranate seeds
  • 1/2 cup light coconut milk
  • 1 tablespoon chia seeds
  • 1 cup greens {romaine, baby spinach or baby kale}
  • handful of ice

Place all the ingredients in a blender and blend until smooth.

Enjoy!
