Happy almost Valentine’s Day!

I’m going to keep this super short because I’m packing my bags to go on a proper and much needed vacation with my husband. I’ll be unplugged for a week in Italy, and I’m like crazy excited about it. You should follow me over on Instagram – where I’ll surely be plugged in to share my trip details.

Now. These vanilla donuts which are refined sugar and gluten-free and vegan, are paired with vegan chocolate ganache frosting. And sprinkled with rose petals and cacao nibs. They’re obviously appropriate for Valentine’s Day and of course, anytime just because. Also, side note. I’m really vibing on rose right now. In my tea. All over my face. Over some rocks. And now on top of my donuts.

I really enjoy Bob's Red Mill gluten-free 1 to 1 baking flour - it's the best store bought blend. And because I don't bake often, I like to keep it super simple and go this route. If you are not gluten-free use whatever all-purpose flour you have on hand.

Ingredients

  • 1/4 cup maple syrup
  • 3/4 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon sea salt
  • 1 1/2 cups gluten-free all-purpose flour
  • 2 1/2 teaspoons baking powder
  • Vegan Chocolate Ganache {see below}
  • 1 tablespoon cacao nibs
  • 1 tablespoon rose petals

Instructions

  1. Preheat the oven to 325 degrees, and lightly spray two donut pans with vegetable oil.
  2. Mix together the maple syrup, milk, coconut oil and vanilla extract, and set aside.
  3. Whisk together the salt, flour and baking powder. Pour in the wet ingredients and
  4. combine well, but be careful not to over-mix.
  5. Distribute the batter evenly into the donut pans and bake for 15 minutes.
  6. After the donuts are done baking remove from the oven and allow to cool. Then dunk the
  7. donuts in the ganache frosting, and sprinkle lightly with cacao nibs and rose petals.

Chocolate Ganache Frosting

Cook Time 1 min
Total Time 6 mins
Serves ½ cup     adjust servings

Adapted from Will Frolic for Food. This will make exactly what you need to ice the donuts. Should you want more, simply double the recipe.

Ingredients

  • 2 tablespoons maple syrup
  • 1/2 cup unsweetened cocoa powder or raw cacao
  • 1/2 cup full-fat coconut milk

Instructions

  1. Whisk all three ingredients together until smooth.

    Yum!! I have missed donuts so much since going vegan. I definitely want to try these! Is this dough dry enough to mold by hand, or are the donut pans necessary?

      Pans are definitely necessary – this is more like a batter than a dough.

      Hi Maria, I am fairly positive any non-dairy milk will work just fine. Please let me know if you experiment with coconut milk.
