Super Green Quinoa Salad with Fresh Basil + Pistachios

I’m a product of upstate New York. I spent my youth and college years barefoot more hours than not. The first 25 years on this planet were spent {almost} exclusively outdoors – hiking in the Adirondacks, swimming in the Finger Lakes, sledding + boating through the St. Lawrence River Valley and camping in the Catskills.

I’ve lived a lot of places; currently in Philadelphia + recently in Colorado. But upstate New York is my home and always will be. If this Buzzfeed article means something to you than you get me. Especially #5, 17, 18, 28, 30, 31 + 37. Okay that’s a lot, but they all serve a purpose.

I lived for each season, one more beautiful than the next. I was lucky to have so much space to run and play. I was wild and I was free and lovin’ it. I would leave my house each morning and I wouldn’t come running home for dinner until dusk. Upon my return I’d be full of mud, grit, grime and total exhaustion.

My parents had a great big thriving garden. My dad taught me how to care for it. My mom taught me how to cook from it. And my love for the two were born. I had fallen completely in love with Mother Earth from a very young age. I love it so. I do my part to treat this remarkable planet of ours with great respect and to honor its beauty and all that it provides.

I can’t think of a better way to celebrate Earth Day than with this deliciously beautiful Super Green Quinoa Salad. Pumped full of local organic goodness and so much love for my planet. I mean look at those Miner’s Greens, does it even get better than that…is this real life?

Super Green Quinoa Salad with Fresh Basil + Pistachios

Lightly adapted from + inspired by, Sainsbury’s Magazine

This takes just 15 minutes to put together and will serve 2 very hungry people.

Ingredients:

  • 3 large leaves of lacinato kale, ribs removed + shredded thinly
  • 1 cup fresh basil leaves, chopped
  • 2 tablespoons extra virgin olive oil
  • 1 to 1 1/2 tablespoons fresh lemon juice
  • 1 cup cooked quinoa
  • 1/2 avocado, cubed
  • 1 packed cup spring greens or sprouts, I used Miner’s Lettuce featured above
  • 1/4 cup shelled + lightly chopped pistachios, walnuts would also work
  • 1/4 teaspoon sea salt
  • generous pinch of black pepper

In a large bowl toss together the shredded kale, basil, olive oil, lemon juice and salt + pepper. Massage together for about 3-5 minutes.

Then add in the cooked quinoa, avocado, greens and pistachios; toss together gently and serve.

    This was awesome, thanks for sharing! I used walnuts because I had them and skipped the additional green topping b/c nothing jumped out at me. I made 2 cups of quinoa and figured I would do something with the leftovers but loved this so much that right after dinner I made another batch for leftovers :)

    Hello Sherrie , you had me at qui and kale with my fav nut. I am not. sure where I would look for the tiny lettuce so I will get my fav Sprouts snow pea for topping . Trying to build up my body from a back condishtion .thanks will try beets next. Best Dana w .
