Chili + Lime Roasted Asparagus

Come spring, I could literally eat my body weight in asparagus each day. And without trying too hard I’m pretty sure I fulfill that desire. I would be perfectly happy devouring a plate of roasted asparagus for breakfast, lunch and dinner. And that’s not an exaggeration.

Cinco de Mayo is coming up, and though I don’t think I’ve celebrated this holiday since college, all these wonderful Mexican-themed dishes with Latin infused flavors I’m seeing circulating through the interwebs have me inspired.

I introduce to you, my Chili + Lime Roasted Asparagus, also known as my latest craze, also known as my current breakfast, lunch and dinner.

Chili + Lime Roasted Asparagus

Prep time: 5 minutes
Cook time: 15 minutes
Serves 2 – 4

Ingredients:

  • 1 large bunch of asparagus, approximately 40 thin stalks
  • 1 tablespoon of olive oil
  • 1 teaspoon chili powder
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon sea salt
  • zest from 1 fresh lime

Preheat the oven to 450 degrees.

Wash and cut the ends off the asparagus. Line a baking sheet with parchment paper. Toss the asparagus with the oil, chili powder, lime juice and sea salt. Lay flat and roast for 15 minutes, flip halfway through.

Pull the asparagus out of the oven and sprinkle with fresh lime zest; serve hot or cold.

    Beautiful!!! I am also obsessed with asparagus! I love the green ones more than white and I have seen purple ones floating around the stores that I may try.

    OH MY LANTA! This looks SO good. I usually just add bacon, because, well, it’s bacon! But this sounds so tasty!! Thank you for sharing another great way to eat asparagus. Or as my grandson calls it “AsperGus”.

    I’ve had my eye on this one for a while Sherrie. I made it tonight, but had to change it up a bit. I added cilantro and cooked in foil on the grill. AMAZING! Thanks for the recipe.
