My vegan, go-to green drink with pineapple and mint.
I’m in Denver right now.
I’m writing this as my nephew naps. Catching up on all the last minute work stuffs I have on my plate, handing in freelance assignments, and checking off the essential to-dos on my never-ending {even when I’m on vacation} list. After that happens, I can have a proper break. I haven’t left St. Louis since Italy. I’ve been all work, almost no play. And this little break out west feels right.
Life here is slow and sweet.
Just as I remember it. I plan to cook for my family. Snuggle my nephew. See some friends who I’ve missed dearly. Drink a lot of coffee. See my favorite band at my favorite venue. Breathe in that fresh mountain air. Virtually detox as much as possible. And hit up as many high-vibe, eat and drink places as I can. Because the Midwest does not exactly boast an impressive number of these.
Living in the Midwest, I feel like I’m on a endless quest to consume a daily green drink. I can always make something at home, this I know. But having an abundance of options to grab and go, like when I lived in Philly and Denver, that kept things interesting. To stay out of a green drink slump, I’ve been experimenting with textures and flavors and consistencies. Right now I’m really enjoying a green drink that has the components of a smoothie, but the texture of a juice. Also it must be poured over ice, that’s crucial for the experience.
Green drinks should be equal parts nourishing and delicious. This coconut-y green drink tastes like healthy-ish, tropical-ish mojito. I dig them, a lot. They’d be great with some rum or vodka or gin too, like just in case you were wondering. They’re infused with Silk’s Toasted Coconut + Cashew Nutchello. - 1/2 cup Silk’s Toasted Coconut + Cashew Nutchello {or preferred plant milk}
- 1/2 cup coconut water
- 1 cup kale, torn into pieces
- 1/4 cup mint leaves
- 2 cups pineapple, diced
- 2 tablespoons ground flax seed
- 1/8 teaspoon [url href=”http://amzn.to/2hpe6gu” target=”_blank” rel=”nofollow”]pink Himalayan salt[/url]
- ice
- Combine all of the ingredients except for the ice in a blender, and blend until smooth.
- Serve over ice, with a sprig of mint.

Oh my gosh, this looks delicious. My brother and sister-in-law live in Denver and when I visited them I was thrilled with the great smoothie and juices places everywhere! I live in Minneapolis and we have a few, but not as many. I usually just make my own. I'll have to try this one! :)

I want this with some rum! That's such a good call. It was SO good to see you, when you were out in Denver. Those two hours brightened up my day. Steve and I ended up going to see M83, even though all I wanted to do was sleep. The rain went around us, like CO weather kind of does, and we were home by 11:15. So, I got my early night fix, too. HUGS!!
