Strawberry Basil Creamsicles

Tomorrow {insert large sigh of relief here} is the first day of summer, aka it’s carefree mix-tape listenin’, road-trip cruisin’, farm fresh eatin’, flip-flop, sundress + sunglass wearin’ season.

I. Can’t. Wait. I also don’t know a better way to celebrate all this than with popsicles, Strawberry Basil Creamsicles that is. Plus, there’s a super bonus, it’s Popsicle Week over on Wit & Vinegar. I mean does it get better than a whole week of popsicles celebrations? I didn’t think so.

I feel like I spend a good chunk of my life pinning popsicle recipes, so I’m really not sure why it took me so long to actually buy a popsicle mold.

Seriously, every year I’m like I wanttttt oneeee, but I never bought one, until now and I’m totally hooked. Yesterday on Facebook a lot of you were curious as to which popsicle mold I have, so here it is, the Norpro Ice Pop Maker. Expect a lot of yummy frozen treats from me this summer, that’s a promise.

So back to these creamsicles – my friend Kelly from The Spunky Coconut has a beautiful new book coming out in 4 days {and I’m giving away a signed copy of it, jump to the bottom of this post to enter}!! It’s called Dairy-Free Ice Cream: 75 Recipes Made Without Eggs, Gluten, Soy or Refined Sugar and it’s pretty spectacular. I have to admit making ice cream of any kind, let alone one without dairy seemed super overwhelming to me, hence the reason I didn’t even buy a popsicle mold until like like week.

Her book is packed with wicked stunning, yet super approachable recipes that are hand-crafted so perfectly. Kelly totally makes you feel like – yes you can, yes you can totally become an ice cream makin’ rock-star. I was feeling pretty empowered myself so I turned to her classic Strawberry Ice Cream for inspiration. I love the flavors of strawberry + basil, I mean who doesn’t, right?

Enough said my new creation was born, Strawberry Basil Creamsicles and they’re amazing. So amazing in fact, I have one dripping into my keyboard right now at 8:53 in the morning while I type this, #toodelicious #dontcare.

Strawberry Basil Creamsicles

Inspired by, Kelly Brozyna’s classic Strawberry Ice Cream from her new book, Dairy-Free Ice Cream

Creamsicles take just 10 minutes to prep + it fills a Norpro Ice Pop Maker perfectly.

Ingredients:

  • 1 can full-fat coconut milk
  • 1/4 cup local honey or 5 pitted Medjool dates
  • 1 teaspoon lemon juice
  • 2 teaspoons vanilla extract
  • 2 cups fresh strawberries
  • pinch of sea salt, Aztec Sea Salt is my favorite
  • 1 good handful fresh basil leaves

Combine the coconut milk, honey {or dates}, lemon juice and vanilla extract in a blender. I used my high-speed Blendtec, but any blender will do. Once this mixture is well combine, just a few pulses should do the trick.

Then add in the strawberries, give it a few more good pulses. Next add in the basil leaves and pulse again until leaves are chopped fine. Pour the mixture into your popsicle mold and freeze accordingly.

    Both my son and I are dairy/gluten free and Paleo so it is such a delight to make him really fun, delicious, envious treats for him that he can share with his little friends and feel no different than them. In fact, it’s always even better when he is the envy of the bunch with the amazing recipes I have been able to find. Who needs that processed garbage when he can have these fabulous goodies made with love that make his body feel great! I would love this book to add to the joy!

    I am so excited about your new dairy free ice cream book. Ice cream was one of my favorite foods until I found out that I had food allergies. Now eating isn’t fun anymore.     I am so excited about popsicles this year, I put my first batch in the freezer last night. I’m also missing ice cream since I figured out that I am allergic to uncultured dairy products and have been fascinated to try dairy free varieties.     For my son to have store gluten, dairy, corn, soy free ice cream its $30 (Au) per litre and a 200km round trip. To be able to make him some that I know works would be heaven as living so far from anywhere, I also need to be careful with ingredients.

    Ooooh this popsicles look so delicious!!! It was my love of ice cream (daily) that brought me to the realization that I needed to burn off all the extra flab I’d gained in August of 2013, so I joined crossfit after my first trial class was over since it kicked my butt.
    I’d like to win a copy of the book so I can make sweet treats that are also paleo friendly for my family and friends for years to come! I’m part of a big crossfit box and we have a large number of people familiar with and follow the paleo lifestyle. We also host crossfit competitions, “beach body” fitness competitions, and lots of potlucks throughout the year! This is as close to a family outside of my own family that I share with these people and it makes keeping fit and eating right so much funner when there’s likeminded people to share it with! We have a super active facebook group that we share all kinds of fitness, health, and hilarious memes with members of our box.     My 5 year old can’t eat gluten, dairy, and cane sugar. I make some great fudgsicles (avocado based) and fruit based (strawberry banana with raw honey is their favorite.) We just discovered Ruby’s Rockets which are sweet potato, carrot, and orange and she really likes those. However, they’re expensive. I love the idea of expanding beyond my current recipe list to provide her with tasty, healthy options that include more than just fruit and honey.

    Like you, I’ve been dreaming of creating my own frozen desserts, but have been hesitant for many reasons. Ice cream has always been my most favorite dessert in the world. It is my childhood. It is family and memories and just plain yum! I recently made my first batch of cherry chocolate chip ice cream (coconut milk) from the Healthy Gfree Life. Worked out some kinks on serving after frozen (since it really freezes & ices over) and now I’m hooked! Last week, I preordered The Spunky Coconut book (can’t wait!). I, too, have been wanting to move on to popsicles – and your post did it for me! Just ordered the mold you recommended on Amazon as well! Needing to go gluten free was a big deal for me. Learning 3 years later that dairy & eggs had to go was a game changer! It was emotional. Admittedly, I felt really lost at first! Now, I’m inspired and comforted by what I’m discovering. I am so grateful for go-getters like you who dare to imagine, create and then share so freely! It’s individuals like you who are changing the way I look at food, shop, cook, live. No more mainstream… This is about quality living and choosing a good life. My only daughter is now grown & married. I wish I could re-do her growing up years with what I know now. I’d nurture her with food in such a different way. Nowadays, I share my new love for creating good eats & treats at home with friends and family every chance I get. It’s like planting seeds in a garden and patiently tending to it in hopes that one day it blooms! Meaning that ALL of my family will see food in a different way, someday. To put it simply, it matters to me…they matter to me. The only way I know how to make a difference in others’ lives is to keep making & sharing all of these wonderful creations. It’s a lot of work, making everything myself. But the reward? It’s beyond measure. Here’s to making a big difference with little changes each and everyday.     I’m allergic to eggs & I’ve always wondered why certain ice creams are made with eggs. I bypass all ice cream recipe’s that have eggs in them. I know I’m missing out on some wonderfully flavored ice creams because of the egg content, but they’re not worth it to me if I have an allergic reaction to it and spend the day in the emergency room for an anaphylactic reaction. I would love to have an ice cream recipe book that’s full of delicious recipe’s which don’t use eggs in them.

    I would love to win this book!! I am highly intolerant to a ton of foods (especially dairy, egg, gluten & soy), and every “allergy friendly” ice cream makes me sick – which is terrible because I love ice cream. I make a lot of frozen banana soft serve, so this book would be a dream come true, and it looks like an amazing and beautiful book!! Thanks for the opportunity!

    Thanks for posting this — I am definitely going to have to try to make these! And that book looks amazing! My boyfriend and I are trying to kick sugar and dairy but we both have a HUGE sweet tooth. The recipes in the book will help us kick the habit but still enable us to enjoy dessert!
