Strawberry Basil Creamsicles with Coconut Milk

It’s the moment we’ve all been waiting for.

Tomorrow is the first day of summer.

It’s the carefree.

Mix-tape listening.

Road-trip cruising.

Farm fresh eating.

Flip-flop, sundress and sunglass wearing season.

And, I cannot wait.

I don’t know a better way to celebrate all of this than with popsicles. Or in this case, creamy strawberry basil creamsicles.  Because also it’s #popsicleweek over on Wit & Vinegar. I mean does it get better than a whole week of popsicles celebrations? I didn’t think so.

My friend Kelly from The Spunky Coconut has a beautiful new book coming out in 4 days, and I’m giving away a signed copy of it! Jump to the bottom of this post to enter. I have to admit making ice cream of any kind, let alone one without dairy seems super overwhelming to me. Hence the reason I haven’t even bought a popsicle mold until like like week.

Kelly’s book is packed with stunning photographs and super approachable recipes that are hand-crafted so perfectly for cooks of all skill levels. She makes you feel like – yes you can. Yes you can totally become an ice cream making rock-star. I was feeling pretty empowered myself so I turned to her classic strawberry ice cream recipe for inspiration.

I love the classic flavors of strawberry and basil. It tastes like the summer coming together. Strawberry basil creamsicles are a little bit sweet and a little bit herbaceous and a staple in my freezer during the warmer months. Click here for more frozen food inspiration.

Strawberry Basil Creamsicles with Coconut Milk

Prep Time 5 mins
Cook Time 5 hours
Total Time 5 hrs 5 mins
Serves 10 pops

Recipe inspired by Dairy-Free Ice Cream.


  • 1 can full-fat coconut milk
  • 2 cups fresh strawberries
  • 1/4 cup maple syrup
  • 1 teaspoon lemon juice
  • 2 teaspoons vanilla extract
  • 1/8 teaspoon pink Himalayan salt 
  • 1 ounce vodka {optional, see notes}
  • 1 cup basil leaves


  1. Combine all of the ingredients, except for the basil leaves, and blend until smooth. Add the basil leaves in and pulse gently until small flecks appear.
  2. Pour the mixture into your popsicle mold. Cover, add the sticks and freeze until completely frozen.

Recipe Notes

Vodka helps this recipe freeze less icy. It doesn't have any affect on the taste - feel free to leave out altogether.

    Oh wow. I am lactose intolerant, so winning this book would be of great help to me because ice cream is delicious, but dairy-free, it’s quite hard to find!

    I am so excited about this new dairy-free ice cream book. Ice cream was one of my favorite foods until I found out that I had food allergies. Now eating isn’t fun anymore. Being gluten, dairy and yeast-free for me is very hard, but these recipes make it much easier.     I am so excited about popsicles this year, I put my first batch in the freezer last night. I’m also missing ice cream since I figured out that I am allergic to uncultured dairy products and have been fascinated to try dairy-free varieties.
