Avocado Toast with Cilantro Lime Cashew Cream | With Food + Love

Avocado toast – the bestest of all breakfasts. The classic standby, the old faithful. It never disappoints, it never lets you down. And for most of you {I’m assuming so} this avo-toast isn’t a new concept. We’ve all been rockin’ this breakfast, snack, lunch, what have you for a while now and I think it’s safe to say we can all agree that it is pretty much life-changing.

To whomever created avocado toast, your culinary concept is genius. You are a total goddess {also assuming a woman created this badass bite, because let’s face it women are better, just kidding…kinda}. I don’t even know when my first bite of avocado toast was, but I know when I did it was fairly simple. Toasted gluten-free bread with avocado sliced on top, pinch of sea salt. Bomb.

SIDE NOTE – I love Udi’s Chia Millet Gluten-free Bread. I’m not getting paid to say this, it is just the truth.

Then this happened. Toasted gluten-free bread, avocado sliced on top, pinch of sea salt, squeeze of lime + sprinkle of crushed red pepper flakes. Whoa, I mean this really took it to the next level. And THEN, this morning, I magnified the flavor experience with the addition of my Cilantro Lime Cashew Cream that I had lying around from yesterday’s post. 

So here we are – a classic avocado toast kicked up about one thousand notches. And, I’m serious when I say…this cashew cream is life-changing. Mega, mega, mega life-changing. Make a batch, double it and then make another. GAH – I mean, I could swim in it.

Avocado Toast with Cilantro Lime Cashew Cream | With Food + Love

Avocado Toast with Cilantro Lime Cashew Cream

Make two slices for yourself and share the other two with a friend, if you feel like it of course.

Ingredients:

  • 4 pieces of bread
  • 1 super ripe avocado
  • 1/4 cup Cilantro Lime Cashew Cream
  • fresh lime juice {optional}
  • sea salt
  • coarse ground pepper
  • crushed red pepper {optional}

Toast your bread accordingly.

Slice your avocado in in half, lengthwise and remove the pit. Scoop out the avocado flesh and spread it onto the toast. Each piece of toast takes roughly 1/4 of the avocado. Squeeze some fresh lime juice on top of the avocado to prevent it from browning.

Drizzle the cashew cream generously over the avocado and top with a pinch of sea salt, pepper and crushed red pepper.

Devour immediately!!

    Brrrreeeefest! I admit, I’ve never had avo toast and my eyeballs are popping out of my head at the site of all them slices of green with the cilantro cashew crema drizzle. Ugh I die. I want these on all the mornings.

    Life changing for me was the addition of the coconut oil to the avocado toast -with the combo of lemon juice, red pepper flakes and sea salt.. I don’t know what magically happens in this combination but wowzers!! I found myself craving it as a late night snack.
