Strawberry Shrub Cocktail with Chamomile Honey Syrup

A fresh, easy strawberry shrub infused with chamomile tea and naturally sweetened with a touch of honey. Enjoy this as a cocktail or a mocktail.
Ingredients
Shrub Ingredients
- 1 cup filtered water
- 2 cups strawberries
- ½ cup honey
- 1 cup apple cider vinegar
Syrup Ingredients
- 1 cup filtered water
- 2 tablespoons loose chamomile tea
- ½ cup honey
Instructions
1. In a small sauce pan, bring the water and strawberries to a gentle boil. Reduce the heat and simmer for 10 minutes. Remove from the heat and let cool for 5 minutes.
2. Then strain the strawberries, discard the pulp and keep the liquid. Add the honey and stir to dissolve. Lastly add in the apple cider vinegar. Stir again to combine well, and set aside to cool completely.
3. In a small sauce pan, bring the water and chamomile to a gentle simmer but not a full boil. Then turn the heat off completely and steep for 10 minutes.
4. Strain the mixture and discard the chamomile. Add in the honey and stir to dissolve. Set aside to cool completely.
5. To make a strawberry shrub cocktail with chamomile honey syrup: combine 2 ounces strawberry shrub, 1 ounce chamomile honey syrup and 1 ounce gin (or vodka) in a cocktail shaker with ice. Shake until frothy and strain into a martini glass. Garnish with chamomile flowers.
Notes
Store the strawberry shrub and chamomile honey syrup in an airtight container in the refrigerator for up to 1 week. Both elixirs can be mixed with club soda for a refreshing non-alcoholic beverage.
